Testimonials are an easy one, simply have the question asked at the delivery "would you mind doing a quick video testimonial for our website?" some people will turn it down, some people will be excited to do it. I think you can get a pretty good feel by the time of delivery as to whether or not they will be up for it. For test drives, if you don't mind spending a little cash, invest in a cheaper GoPro camera that you can mount to the dash.
Testimonal video can be done on any ones smart phone these days, and about 30 seconds will do. The test drive with a gopro is simply stick and press record so your sales process is still the same length. Sales reps can deal with uploading the video and posting it up online until after delivery.

This may be a little late to get in on this concept since the original post as a few years ago, but maybe it can spawn some new ideas and maybe Nate can share his success stories!
I agree with Brian on how to fold it into the process. Hopefully, you have been able to create some amount of trust during the purchase process and if you are expecting a positive review, you should not be afraid to ask for it!
The best testimonials, video or not, are those posted by the customer. If the dealership posts the testimonial, only the followers of the dealership page will see it (generally). However, if you can get the customer to post a video or picture with their testimonial on the dealership's social channel, all of their friends and followers will be exposed to the positive experience, in addition to the dealership's current fan base!
